Traditional Indian Mains
  • Balti

An important traditional main in most curry houses, cooked with special spices in an iron wok type bowl. A Balti bowl is essentially an iron wok with two ears or handle. The sauce used in Balti dishes contains mainly tomato puree and generous veg (like bell peppers) with added ground spices. It’s also common to call the curry houses in Birmingham region ‘Balti houses’. Balti mains are served in smaller stainless steel Balti bowls. A must try Indian main to become a fan of curry cuisine! Although Chicken Balti is a popular dish, lamb, prawn and veg Balti’s are also served in a typical Balti houses.


  • Curry

If you want to try the real Indian dish, a curry is the best place to start. Derived from the word, Kaari (South Indian for a spiced dish), a typical Indian curry is full of traditional ground spices and with added fresh curry and coriander leaves. It’s not too hot, but got medium savoury taste. This Indian main made curry cuisine one of the favourites of British classics.

  • Korma

One of the best mains to start if you are completely new to the curry world! Very mild and creamy main that is full of flavours and rich aromas. Cooked with almond, cashew and other festive nuts. Coconut milk is also used if required and gives that nutty flavour for the dish. Chicken korma is a great combination with the garlic-coriander naan. It’s so addictive and celebrative dish that make you enjoy the curry night thoroughly!

  • Rogan Josh

A rich Kashmiri dish originated from Persia and brought to the Indian subcontinent by Moghuls. Although it is considered as a garlic-tomato rich main, rogan josh uses authentic and aromatic spices like cloves, cardamoms, cinnamon sticks, Indian bay leaves and black pepper. A predominantly lamb dish with a hint of yogurt to balance the intense spices used. Adding of paprika (or Kashmiri chillies if you are lucky) gives the brilliant rich red colour to the dish. If you are a frequent visitor to the curry world, this is a recommended dish for you to go deeper into the ocean of spices. A great weekend curry night favourite with friends and family and a bit of alcohol to make the event a special one.

  • Dopiaza

The literal meaning of this dish is ‘double onions’ (‘DO’ means two or twice and ‘PIAZA’ means onion). Essentially a curry dish with generous amounts of fried onions in medium spicy gravy. Chicken Dopiaza is one of the favourites with Pulav rice. Accidentally invented, but now evolved as a proper curry dish and a main part of Hyderabadi cuisine. Since onion is used in two stages – while cooking and then to garnish, this main is preferred by the new curry tasters for it’s mild and inviting taste. Next time when you order a Dopiaza, show your skills by saying ‘to add extra chicken along with double onions’!

  • Bhoona

This main curry gets its name from the way the dish is cooked – mainly fried with spices with little or now gravy or sauce. Known to be originated in Bengal, this medium spicy curry is rigorously cooked in high heat with traditional spices. For an inquisitive curry lover, this dish is a celebration. A raita to accompany this main is recommended to balance the dryness of bhoona (dry fried dish). Exploring the curry world with this type of dish is really enjoying to make your curry night a complete one.
