Yes, we are talking here about potato peas curry, aka Aloo Mutter. This will change the way you intake your greens and never complain about dull vegetarian meals again. Good thing is it is also so simple to cook and serve with your favourite rice, roti or even pasta (for that fusion dish!).

Aloo mutter is essentially a Punjabi recipe but enjoyed in most pure vegetarian and roadside Dhabas (motels) in Indian subcontinent. This curry dish is vegan, gluten free and the ingredients are simple day-to-day potatoes and peas. Usually served with roti, naan or rice this aloo mutter recipe takes no more than 30 mins to cook. The use of good quality ground turmeric, cumin, red chilli and coriander in powder form transforms ordinary potato and peas into a luxury, spiced up and flavoursome curry recipe. Here is Your Recipe

1 cup green peas
2 medium size potatoes
2 medium size tomatoes
8 or 10 cloves of fresh garlic
1 inch fresh ginger piece
1 tablespoon coriander leaves (optional for garnish)
2 Green chilies
1 small onion
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon red chilli powder
½ teaspoon turmeric powder
2 tablespoon oil (choose coconut oil for better results)
Salt to taste

Grind garlic, ginger, tomatoes, green Chillies, onion, salt, coriander powder, cumin powder, red chilli powder and turmeric powder
Heat oil in a pan or pressure cooker.
Add ground Masala and roast till oil separates
Add potatoes pieces, and green peas and mix properly
Add water and pressure cook or simmer until potatoes cooked nicely
Garnish with coriander leaves
Serve with rotis, naan or rice

Use good quality seasonal potatoes

Substitute tomatoes with readymade tomato puree for better colour and convenience

Using fresh greenpeas in the season is even better for mouthwatering taste
