Gujarati Kadhi Recipe

Gujarati kadhi recipe is a simple and easy buttermilk based recipe, but its warmth, aromatic sweet flavours make it a popular choice amongst the other varieties of kadhi dishes. A charming companion of rice dishes like khichdi, flavoured or plain rice and Gujarati flatbreads like rotla, thepla, etc.

Slightly thinner than other yogurt based savoury dishes, kadhi recipe is enlivened by besan (chickpea flour) and traditional spices for a fascinating warm side dish. It has got a hint of sourness and dominating salt and sweetness which encompasses the Gujarati cuisine. A must have side dish which appears in any celebrating ‘thalis’ as well as in humble homemade meals.

Here is Your Recipe

1 cup of plain yogurt (natural set yogurt)
1 tablespoon fine besan flour
4 cups of warm water
2 teaspoon jaggery for authentic taste (or sugar)
1 green chilli finely chopped
1 inch fresh ginger ground coarse
1 tablespoon ghee (or sunflower oil)
½ teaspoon turmeric
¼ teaspoon hing (asafoetida)
¼ teaspoon ground fenugreek seed powder
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 dried red chilli chopped into 4 pieces
1 sprig of fresh curry leaves
2 sprigs of fresh coriander leaves for garnish
Salt to taste

Add yogurt, besan flour and jaggery to warm water in a pan and beat well so that no lumps remain.
Sprinkle finely chopped green chillies, ground ginger and turmeric powder over and mix well.
Now heat this on a medium heat for over 5 minutes until hot but do not boil and keep aside.
Take another small pan and prepare for tadka.
Pour ghee (or oil) and heat for a couple of minutes.
Add mustard and cumin seeds to splutter.
Sprinkle hing and fenugreek powder and mix well.
Fry the chopped red chilli pieces and curry leaves for a minute.
Now add turmeric powder and give a good stir.
Now pour the heated yogurt and besan mix and cook for a few minutes.
Add salt and garnish with coriander to serve with rice or your favourite Gujarati rotlas.

Use natural set yogurt only
Do not boil which spoils the taste of yogurt
You may add cinnamon powder for a lavish flavour
