Don’t ask what’s literal meaning of Jalfrezi is, instead enjoy the flavourful, spicy chicken dish that will give you the experience of curry night when you crave for a hot one.
Jalfrezi is a type of cooking from the north eastern state of India, Bengal. It is inspired by chinese style cooking that involves stir frying of chunky cut ingredients like peppers, onions and chicken. Then cooking the stir fried ingredients in the tomato sauce prepared with exotic spices to give a hot and unique aromatic flavour to the curry dish.

300 gram chicken breast (free range for better flavours)
2 bell peppers (one green and one red)
4 ripen vine tomatoes (3 for sauce)
1 medium onion
8 to 10 strands of fresh coriander (optional)
1 teaspoon garam masala
2 teaspoon cumin seeds
2 green chillies
1 teaspoon garlic-ginger paste freshly made
1 teaspoon of chilli powder
1 teaspoon sugar
3 tablespoons ghee (use coconut oil for vegan friendly)
Salt to taste
First prepare the tomato gravy or sauce using 3 sliced tomatoes.
How?
Heat 1 tablespoon oil or ghee and add 1 teaspoon cumin seeds and crackle.
Now add sliced green chillies, freshly ground garlic ginger paste, turmeric and fry for a few minutes. Sprinkle sugar and salt and stir well.
Now place the nicely cut 3 tomatoes and cook until softened.
Pour 2 glasses of hot water and simmer for 10 to 12 minutes mixing occasionally.
Once tomatoes are cooked nicely, let it cool down and then blend it to a smooth gravy or sauce.
In a hurry?
You may use good quality tomato sauce, but trust me, this homemade gravy tastes a lot better!
Now let’s cook the curry:
Cut the chicken breast into inch size pieces.
Chop peppers, onions, one tomato into large chunks.
Slice coriander.
Heat the 2 tablespoon ghee in a pan. Crackle cumin seeds.
Now add the chunky sliced onions and bell peppers to fry for at least 2 minutes.
Add the chunky tomato pieces. Now sprinkle the garam masala over.
Freerange or organic fresh chicken is recommended for the best results.
Using ghee gives lavish and aromatic twist to the Jalfrezi instead of other cooking oils.
Save time by adding ready made tomato sauce, but choose good quality to get nearly same flavour as homemade gravy as mentioed in the method.
